Meals in a Jar: Banana Split Snack in Strawberry Yogurt

I decided to make a dessert from our THRIVE Life foods and chose to adapt this one from Caryn’s Banana Split Snack from the Meals in a Jar recipe book that can be had for free by subscribers to our monthly newsletter (details can be found after the post).

Like all meals in a jar, this is simple to put together and just as easy to get ready to eat. 🙂 I should note that the first time I tried this I choose to simply mix all of the ingredients together–including yogurt bites–and add the appropriate amount of water but for some reason I ended up with runny yogurt and turned-up noses from my family! The directions below worked out much better.

The ingredients I used to fit in a quart mason jar is as follows (you can use less or adjust ingredients to your desires):

Just mix all of the ingredients together EXCEPT the yogurt bites into a bowl and then pour into the mason jar… or you could just dump them directly into the mason jar to save time. Add the yogurt bites into a small sandwich bag and place at top of the mason jar; alternatively, you could separate the yogurt bites using wax paper.

If you don’t intend to eat this snack within a few weeks or months you can extend the shelf life for months to years by including an oxygen absorber or, better yet, using a Foodsaver to suck out the air. This is one of many great reasons to own one, by the way.

To eat this super-yummy snack remove the yogurt bites, dump in a bowl, add approximately 1 Tablespoon + 1 teaspoon of water and let sit for 5-10 minutes; whisk until smooth. You could choose to start with a little less water and add more if needed.

Take the remaining ingredients, dump in a separate bowl, add approximately 2.5 cups of water, stir and let sit for about five minutes; pour off any excess water. I would choose to stir it once to ensure everything gets re-hydrated properly.

Now combine the fruit into the yogurt, mix, enjoy! You could choose to let it sit in the refrigerator for an hour or two if you like it cold. Granted, you could simply eat this snack without re-hydrating first, if you prefer, but I’d much prefer it to be re-hydrated.

I should note that the original recipe that this was adapted from called for 1 cup each of banana slices, pineapple chunks, strawberries, vanilla yogurt bites, and semi-sweet chocolate chips but I’m almost positive that won’t quite fit in a quart mason jar; maybe 3/4 each would. Anyway, we didn’t have any chocolate chips which would have been a tasty addition but I’d suggest our recipe is a bit healthier without them.
