Meals in a Jar: Hearty Vegetable Soup

This past week we got into one of our delicious meals in a jar recipe, Thrive’s Hearty Vegetable Soup:

The ingredients are quite a few and include (note: FD=”freeze dried”):

  • 4 cups water (added to the pot when ready to cook)
  • 2 tsp Chicken Bouillon
  • 1/4 cup Potato Chunks
  • 1/4 Cup Broccoli FD
  • 1/4 cup Carrots
  • 1/4 cup Zucchini FD
  • 1/8 cup Green Onions FD
  • 1/4 cup Green Peas FD
  • 1/4 cup Asparagus FD
  • 1/4 cup Sweet Corn FD
  • 1/8 cup Onions FD
  • 1/4 cup Green Beans FD
  • 1/8 cup Red & Green Bell Peppers
  • 1/4 cup Red Bell Peppers FD
  • 1 tsp Chef’s Choice Seasoning
  • 1/2 cup Shredded Cheddar Cheese FD

To make, add four cups of water to a pot then add all ingredients from the jar. Cook over medium heat until it boils OR until the potato chunks are full cooked. Here’s what it looks like when first dumped into the pot and stirred around a bit:

And when it’s done cooking this is the finished meal (I’d say it would have made enough for three adults or two adults and two younger children):

Although my boy’s turned their collective noses up to it because there were far too many vegetables, I found it to be a rather tasty meal EXCEPT that I failed to follow the cooking instructions to ensure the potato chunks were completely done as there were quite a few potato chunks that were not properly cooked. I’d imagine that if I’d cooked it for another ten minutes or so they the potato chunks would have been done too. Otherwise it was certainly hearty and tasty.

Obviously, you can mix and match such a meal as you like adding whatever vegetables you preferred in the quantities you desired. You can find these vegetables and many others on my Thrive Life store here.

    How big of a jar do you need

    1. I believe they were quart jars.

  3. I think it would be perfect to substitute the broccoli and peas for some lentils and then pour in a jar of my canned venison! Yummy! Or maybe that’s and entirely different recipe. 😉

    Damian you need to make a whole lot more if you expect us all to show up for supper. Looks good. A couple of beef or chicken bullion cubes added to the jar would be good too.

  5. I bet if you used potato dices instead of chunks it would be perfect. The dices are fd and cook a lot quicker.
