I’ve never been brave enough to dehydrate meat because I always wanted my dehydrated food to be shelf-stable; that’s why I focused mostly on vegetables. But apparently this video suggests that, so long as you follow a few rules, you can expect dehydrated ground beef to last months on the shelf. That’s not something I expected from a dehydrator!
Considering just how expensive food is getting, especially meat, it might be wise to find ways to make meat last longer. That said, you do need to be careful about rancidity concerns and more when it comes to dehydrating meat. Personally, I wouldn’t attempt to make ground beef shelf-stable with anything other than a freeze-dryer for safety and longevity concerns.
