Have a party but don’t want to take the time to make your own chicken salad? No problem! With Thrive’s Chopped Chicken, Chopped Onions, and Chopped Celery, you’re nearly done. 🙂 In fact, I was able to make this even fast with a pantry can of Thrive’s Chicken Salad Mix which already combines the chicken, onions, and celery in the correct proportions:
For some reason we don’t sell the Chicken Salad Mix in a can like this anymore and so you have to buy the separate ingredients which isn’t really a problem assuming you’ll use them for other purposes… and I suspect you will. In fact, we actually ate this for dinner two nights ago. Well, my wife and I did. The kids? Not so much. I made the mistake of telling them the recipe had onions in the mix and it was all downhill from there. 😉
Ingredients:
This recipe originally found here is roughly the same as what I used but since my recipe came from a can of already combined Chicken Salad Mix the ratios are a bit different…
- 2½ c. Chopped Chicken
- ½ c. Chopped Onions
- ¾ c. Chopped Celery
- 2 c. water
- ¾ c. mayonnaise
- 1 tbsp. Dijon mustard
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- ½ tsp. Chef’s Choice Seasoning Blend (in the recipe I used this was omitted)
Directions
Combine chicken, onions, and celery in a bowl with the water, stir well (it may still look a little runny but that’s OK), and refrigerate for about 10 minutes. I think I waited about 8 minutes to move on. Here’s what it looks like WITHOUT the water:
Mix all the other ingredients in a separate bowl until thoroughly combined:
Now add the “other” ingredients to the chicken salad mix and stir together until well combined. Return mixture to the refrigerator for about 1 1/2 hours (yes, it may still look a bit runny but that’s still OK):
Before serving, stir well one more time and serve however you prefer. In this case I ate it just like a half-sandwich. I had a few, in fact:
Overall, the chicken salad mix was quite tasty and both my wife and I enjoyed it. The kids ate it but not so much… guess they just can’t get over that nearly nonexistent onion taste. 🙂
