Egg Storage Experiment – Week 11 Results

Things are looking up again this week, at least with respect to eggs that is. Here we are in week 11 and the egg I used today looked real good. As usual, the egg didn’t float:

After cracking the egg I tried smelling it and didn’t notice anything funny and immediately snapped this pic:

As you might notice, this egg yolk seems to be well intact, which indicates that the membrane is still together if I’m understanding Pam’s comments from previous weeks. Regardless, the egg looked good, tasted fine (though I’m still possibly over-cooking them due to paranoia) and I even shared half with my dog because he was looking pathetic.

Next week will make four months and now I’m beginning to wonder if I’ll have enough eggs (I bought 18 total to begin with) to find out if they’ll go bad but we’ll see.

    I tried a similar experiment: I rubbed each egg with mineral oil – the pure kind that can be used by humans, not that used by painters. Wearing gloves, I poured a spoonful of oil in my palm, then massaged each egg until I was sure it was well coated. This seals the eggshell, so no air is able to seep through the shell.

    I kept the dozen eggs in the refrigerator, in their original cardboard box, with nothing more than the mineral oil they had been rubbed with. Four months later, they were all fine for scrambled eggs. They could have been used for fried eggs, but the white didn’t hold the yolk up as well as it had when they were fresh.

    I HAVE DEHYDRATED EGGS WITH GOOD SUCCESS – AND HAVE PHOTOS OF THE PROCESS. PLEASE CONTACT ME AND I WILL BE GLAD TO SHARE THE ‘HOW TO’ WITH EVERYONE.
