How to Make Homemade Cream of Broccoli Soup Using “Magic Mix” Starter

Rather than buying the store-bought cans of “yucky” cream of broccoli, we choose to make our own homemade cream of broccoli soup using the Magic Mix as a starter I showed you how to make a few weeks back. While her video showed only making the equivalent of one can of condensed cream of broccoli, our recipe needed two so everything we did was doubled.

Homemade Cream of Broccoli Soup Ingredients

To make ONE can of cream of broccoli you would need:

  • 1 cup of magic mix
  • 3/4 cup of warm water
  • 1 cup of cooked broccoli, finely chopped
  • salt to taste

Homemade Cream of Broccoli Soup Directions

It’s rather easy to make but does require some serious whisking. Simply add the water to a pot on medium-low heat, add in the magic mix, and whisk well until it looks like milk:

Heat over medium-low heat and whisk until your arm falls off and the “milk” thickens. You really have to stir near the end to keep it from burning. Rather quickly it will thicken like this:

Take your cooked broccoli (we steam ours) and chop it well. I doubt I chopped this well enough but it worked just fine for our purposes:

Now mix the broccoli into the magic mix sauce and it will look like this:

Remember to add salt to taste. We might have used a few teaspoons in this batch. That’s it. You’ve just made yourself some homemade cream of broccoli soup that only has a few ingredients and, hopefully, ingredients that are MUCH better for you than what you purchased at the store.
