Sun Oven Sunday – Cherry Cobbler

Last week my wife made cherry cobbler on a whim which was delicious so I figured I would try it and see what happens in the sun oven. Fortunately, this recipe is super simple and, yes, I know it’s supposed to brown and won’t do so in a sun oven but I was still curious to see how it would turn out and taste regardless.

Normally, the recipe calls for two cans of cherry pie filling, one box of cake mix (either white or yellow, I used yellow), and a stick of butter. I ended up halving everything because I used the 11 x 7 pans that fit the sun oven (as opposed to the 13 x 9 pan it’s supposed to cook in), so I used one can of pie filling, about half of a box of cake mix, and half a stick of butter.

To make, simply layer the bottom of the pan with the cherry pie filling then gratuitously sprinkle the cake mix evenly atop:

And drizzle with melted butter:

Before I placed the cobbler in the sun oven I decided to give the panels and glass a proper cleaning and even tightened down the two screws that hold the glass to the rubber for a better seal… yes, I was feeling ambitious that day. 😉

I also had the dilemma of needing to cover the cobbler and would normally have done so with a dark towel but I didn’t want the towel to sag and make a mess so I wound up using a piece of scrap wood paneling. I had no idea if that was a good idea or not but I figured it wasn’t a BAD idea and nothing caught on fire:

Anyway, normally the cobbler is supposed to cook for about 35-40 minutes at 350 degrees. Since I’ve yet to have anything cook as fast as it’s supposed to in my sun oven I just figured an hour would be good enough and besides the sun wasn’t cooperating the entire time. Here’s what it looked like coming out of the oven:

Since it didn’t quite look right I had the brilliant idea to torch it myself and out came the Bernzomatic torch:

Regardless, I learned a valuable lesson: use the torch for what it’s intended for and leave the cooking to the sun oven. 😉
