Sun Oven Sunday – Self-Rising Biscuit Bread (No Yeast!)

biscuit-bread-3A few days ago I re-read this article on How to Make Self-Rising Flour and since I’ve never actually tried making bread without yeast and because I wanted to make bread in my sun oven this weekend, I decided to give it a go.

Substituting for yeast is actually incredibly easy. Basically, you just use 1.5 teaspoons of baking powder and 1/4 teaspoons of salt added to 1 cup of flour. You can read the above article as to why it works but I can attest that it certainly DOES work. Of course, I made sure the baking powder was still good by dropping a bit in a hot cup of water and watching it bubble up.

Anyway, while I was planning on making bread using a different recipe, I opted to just use the biscuit recipe provided in the above link that also gave appropriate amounts for baking soda and salt. And, besides, biscuits sounded pretty good.

The thing was that I was already setup to make bread in a loaf pan and really didn’t want to dig out small muffin pans that were only a few feet away so I went ahead and made biscuit bread… yes, I basically made a giant biscuit.

Here’s what it looked like before being cooked:

It’s actually quite sticky and barely filled half the loaf pan. Honestly, I was worried about it rising at all to fill the pan but I tried anyway. Here’s what it looked like after about 45 minutes in my sun oven at roughly 300 degrees:

As you can see, the bread rose quite a bit and I was pleasantly surprised. It actually smelled really good too so I couldn’t wait to take a bite. I immediately extracted the bread, cut off a piece, slathered some butter on there and added a bit of honey too…. mmmmm, delicious!
